Corn Salad is a large leaved variety producing very dark green leaves. It can be blanched by placing a pot or box over the plant a few days before cutting. It is best if the leaves are gathered before the plant flowers.
Lambs Lettuce is a good addition to a salad, but use sparingly as it is fairly bitter in taste.

Sow thinly in a prepared seed bed 0.5cm (1/4in) deep in rows 25-30cm (10-12in) apart.
WHAT TO DO NEXT
Gradually thin seedlings to 15cm (6in) apart, picking the young leaves as baby salad leaves . Alternatively leave plants till fully mature and the cut whole plant. Plants will benefit from cloche protection through the winter to prolong the harvest period.
